Ingredients For This Recipe

  • 4 paper towels, soaked
  • 5 lobster tails
  • Ice bath (water and ice, bath to cool down lobster tails)
  • 1 stick unsalted butter
  • 1 chipotle in adobo sauce, minced
  • 4 garlic cloves, minced
  • Zest of 1 lemon
  • Kosher salt, to taste
  • Pepper, to taste
  • 4 top-split hot dog buns, toasted
  • Garnish
  • Chives
  • Lemon wedges


  1. Place the soaked paper towels in the dutch oven and the lobster tails on top.
  2. Put the lid on with the Redi-Temp™ valve open and cook at medium-high heat.
  3. Lower the heat to low, close the valve and cook for 5 minutes.
  4. Put the water and ice in the bowl and transfer the lobster tails to the ice bath.
  5. Leave the tails submerged until cool, cut off the shell with kitchen shears, remove the meat and cut it off.
  6. Put the butter in the dutch oven and melt it over medium-high heat.
  7. Mix in the remaining ingredients and wait until the butter bubbles.
  8. Add the lobster meat and mix well.
  9. Assemble the rolls by placing the lobster meat on the toasted buns.
  10. Serve, garnish and enjoy.
