Seared Chicken Breast with Dijon Lemon Herb Sauce

Ingredients For This Recipe

  • 4 chicken breast
  • 1 cup chicken stock
  • ¼ cup Dijon mustard
  • 3 tbsp unsalted butter
  • ½ lemon juiced, to taste
  • ¼ cup cilantro, chopped
  • ¼ cup parsley, chopped
  • 1 tbsp fresh oregano, chopped
  • Salt, to taste
  • Garnish
  • Lemon slices, half-moon, seeded
  • White rice


  1. Season the chicken with salt to taste.
  2. Preheat skillet over medium-high heat for 3 minutes.
  3. Place the chicken and cook with the lid ajar.
  4. Turn over, reduce heat to low, place the lid on the pan and close the valve.
  5. Reserve the chicken on a plate.
  6. Increase the heat to high, pour in the chicken stock and bring it to a boil.
  7. Reduce by half and stir in the Dijon mustard.
  8. Lower the heat to medium and whisk in the butter to emulsify and allow to thicken.
  9. Stir in the lemon juice, cilantro, parsley, oregano and season with salt if necessary.
  10. Replace the chicken and cover with the sauce.
  11. Serve, garnish and enjoy.
