Ingredients For This Recipe

  • 4 paper towels, soaked
  • 1 lbs sweet potatoes, peeled and in large dice
  • 2 ½ cups all purpose flour
  • 4 tsp baking powder
  • 2 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1 ¾ cups milk
  • 2 tbsp soy sauce
  • 1 large egg
  • 1 cup shredded chihuahua cheese or oaxaca
  •

  • Maple syrup, drizzle
  • Guacamole
  • Chili flakes
  • Cilantro leaves

Preparation

  1. Place the soaked paper towel in the Dutch oven and place the sweet potatoes in it.
  2. Put the lid on with the Redi-Temp™ valve open and cook over medium-high heat until it whistles.
  3. Lower the heat to low, close the valve and cook for 10 minutes.
  4. Mash the sweet potatoes in a 3-quart bowl until smooth and let cool.
  5. Mix the flour, baking powder, chili powder, garlic powder, onion powder and salt in a 5-quart bowl.
  6. Add the milk to the mashed sweet potatoes, soy sauce and egg and mix well.
  7. Slowly pour the dry flour mixture into the mashed potatoes, mix well and add the cheese.
  8. Drizzle the surface of the pan with maple syrup and preheat for 30 seconds over medium heat.
  9. Pour ½ cup of batter into the skillet and spread evenly.
  10. Cook each side for 3 minutes and repeat until you run out of batter.
  11. Serve, garnish and enjoy.
