Ingredients For This Recipe

  • 1 large Cauliflower Head (cut into florets)
  • 1 English Cucumber (sliced at a bias)
  • Chery Tomatoes (cut in half, to taste)
  • Kalamata Olives (to taste)
  • Dill (to taste)
  • 4 Pita Bread (pocket-less)
  • 2 tbsp Oil (more if needed)
  • Water (to steam)

  • Cauliflower Marinade
  • 1 tbsp Chili Powder
  • ½ tbsp Paprika
  • ½ tbsp Onion Powder
  • ½ tbsp Garlic Powder
  • 1 tsp Cumin
  • ¼ tsp Cayenne Pepper
  • 1 Lemon (juiced)
  • Kosher Salt (to taste)
  • Pepper (to taste)

Preparation

  1. Mix the Marinade in a Mixing Bowl.
  2. Place in the Cauliflower Florets and mix well coating every Floret.
  3. Let the Cauliflower marinate for about 30 minutes, set aside.
  4. Place all the ingredients for the Tzatziki into the Power Blender.
  5. Blend on high until just combined.
  6. Transfer to a mixing bowl and set aside into the refrigerator until ready to use.
  7. Pre-heat the Skillet for 2 minutes on medium-high heat and then add the Oil.
  8. Place in the Cauliflower and let it crisp up for about 3 minutes; adjust heat if needed and move the Cauliflower around to avoid burning. (Chef Note: Work in batches to avoid crowding the skillet and adjust the oil if needed.)
  9. Place about ¼ cup of Water into the skillet and place the lid on.
  10. Let it steam from the sides, lower the heat to medium-low and cook for about 2 minutes or until the Cauliflower is tender but still has a bite.
  11. Take the lid off turn the heat to medium-high and mix until the left-over liquid has coated the Cauliflower.
  12. Clean the skillet and repeat the last several steps to cook the rest of the Cauliflower.
  13. Assemble your Pita sandwiches with Cucumber slices, Cherry Tomatoes, Olives, Dill and the Tzatziki Sauce.
  14. Serve and Enjoy!
