Ingredients For This Recipe

  • 4 lbs roasted Roma tomatoes
  • 4 roasted bell peppers, drained
  • 1 yellow onion, chopped
  • 6 garlic cloves, smashed
  • 4 cups vegetable stock
  • 2 tbsp smoked paprika
  • 1 tsp cumin
  • 1 cup heavy cream
  • Kosher salt
  • Pepper

  • Diced Roma Tomatoes
  • Diced Red Bell Peppers
  • Sour Cream
  • Cilantro Leaves
  • Toasted Sourdough Bread Slices

Preparation

  1. In Dutch Oven, combine all ingredients except garnish.
  2. Cover with Redi-Temp Valve open, turn heat to medium high and wait until it whistles.
  3. Reduce the heat to low, close valve and cook for 10 minutes.
  4. Using the Power Blender Go, process on high until well pureed.
  5. Slowly, pour in heavy cream while blending; adjust seasoning with salt if needed.
  6. Turn heat to medium and cook for another 5 minutes.
  7. Plate and garnish.
