Ingredients For This Recipe

  • 3 cups cherry tomatoes, halved
  • 8 oz fresh mozzarella cheese log, cut in stars, scraps reserved
  • ½ cup blueberries
  •  
  • Balsamic Vinaigrette
  • ¼ cup balsamic vinegar
  • 1 tbsp agave syrup
  • 1 garlic clove
  • ¼ shallot
  • 1 sprig fresh oregano
  • 1 sprig fresh thyme
  • Kosher salt
  • Pepper
  • ¾ cups oil
  •  
  • Garnish
  • Micro basil or basil leaves
  •  

Preparation

  1. Cut tomatoes and place in mixing bowl. Set aside.
  2. Cut cheese into stars. Reserve scraps. Set aside.
  3. Blend all vinaigrette ingredients except oil.
  4. Reduce speed to low. Pour in oil in a steady, slow stream.
  5. Mix tomatoes and vinaigrette. Adjust seasoning. Add cheese scraps.
  6. Plate and add blueberries.
  7. Garnish with mozzarella stars and basil.
