Ingredients For This Recipe

  • 1 orange bell pepper, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 cup cucumber, diced
  • 1 cup broccoli, small florets
  • ½ cup cherry tomatoes, halved
  • ½ cup sliced black olives
  • ½ red onion, diced
  • 1 jalapeño, minced
  • 8 oz Spanish chorizo, sliced or diced
  • 1 1-lb box rotini pasta, cooked
  •  
  • Feta Dressing
  • 4 oz feta cheese, in pieces
  • 1 cup sour cream
  • Zest & juice of 1 lime
  • ¼ cup olive oil
  • Kosher salt, to taste
  •  
  • Garnish
  • Feta cheese crumbles

Preparation

  1. In blender jar, combine all ingredients for feta dressing.
  2. Process at low for a couple seconds, then at high until smooth.
  3. Add cooked pasta to mixing bowl. Pour in feta dressing. Mix well.
  4. Add veggies and chorizo. Mix and adjust seasoning, if needed.
