Ingredients For This Recipe

  • 3-4 6 oz grouper fillets
  • 2 tbsp canola oil
  • Salt, to taste
  • Tajin, 2oz
  •  
  • Mango Salsa
  • 1 mango, chopped
  • 1/2 red bell pepper, minced
  • 2 tbsp red onion, diced
  • 2 tbsp cilantro, chopped
  • 1 jalapeño seeded, deveined and diced
  • Salt, to taste
  • Lime juice, to taste

  • Side Vegetables
  • 4 Roma tomatoes
  • 1 12 oz bag spinach
  • 3 garlic cloves, fine chopped
  • 2 tbsp oil
  • 1 oz water or vegetable stock
  •  

Preparation

  1. Place mango salsa ingredients in a 3QT bowl, mix and set aside.
  2. Season grouper with salt and rub with Tajin spice mix.
  3. Preheat skillet over medium high for 3 minutes.
  4. Add oil, then grouper, skin side down. Cook for 4 minutes, reduce heat to medium, flip fillet and cook to taste.
  5. After fish reaches an internal temperature of 155 degrees Fahrenheit, remove from pan and set aside.
  6. Add oil to skillet and sauté garlic for 1 minute; add tomatoes and salt to taste; sauté for 3 minutes.
  7. Add spinach, water and sauté for 3 more minutes. To serve, place spinach and tomatoes on plate. Add one fish fillet and garnish with mango salsa.
