Ingredients For This Recipe

  • 1 cup whole milk
  • ⅓ cup cornstarch
  • 1 8 oz piloncillo cone or 1 cup dark brown sugar
  • ⅓ cup cocoa powder
  • 5 cups whole milk
  • 1 tbsp vanilla extract
  • ½ tsp kosher salt
  • 10 oz semi sweet chocolate, chopped

  • Whipped Cream
  • 1 cup heavy cream
  • ¼ cup powdered sugar
  • 1 tsp vanilla extract
  • ½ tsp kosher salt
  •  
  • Garnish
  • Shaved Chocolate
  • Chia Seeds
  •  

Preparation

  1. In 2QT bowl, combine all ingredients for whipped cream.
  2. Blend at medium speed until firm peaks form; refrigerate.
  3. Mix 1 cup milk and cornstarch in 1QT mixing bowl, set aside.
  4. In Dutch Oven, combine piloncillo, cocoa powder, 5 cups milk, vanilla extract and salt.
  5. Turn heat to medium and bring milk to a simmer.
  6. Blend at high speed to incorporate cocoa and dissolve piloncillo.
  7. Add chocolate and blend at high speed until chocolate melts.
  8. Slowly pour in cornstarch slurry and continue to blend.
  9. Turn heat to medium high and wait until it starts to thicken.
  10. Once it thickens, turn off heat and blend on high once more.
  11. Pour pudding into ramekins; cool completely and refrigerate to set.
  12. Once chilled, top with whipped cream and garnish.
