Ingredients For This Recipe

  • 4 paper towels soaked in water
  • 2 cauliflower heads, in florets
  • 4 garlic cloves, smasheds
  • 1 cup heavy cream
  • ½ cup parmesan cheese
  • ¼ cup unsalted butter
  • Kosher salt

  • Unsalted Butter
  • Minced Chives

Preparation

  1. Place paper towels in skillet, arrange cauliflower and garlic on top; cover with Redi-Temp™ valve open and cook over medium high heat until it whistles.
  2. Reduce heat to low, close valve and cook for 25 minutes or until cauliflower is soft; remove and discard paper towels.
  3. Blend cauliflower on high until pureed. Add cream, parmesan, butter and salt to taste; blend on high until well combined. Turn up heat to medium and cook until hot.
  4. Plate and garnish.
