Ingredients For This Recipe

  • 2 garlic cloves, minced
  • ½ shallot, minced
  • 2 cups butternut squash, medium dice
  • ¼ cup vegetable stock
  • 1 ½ cups tricolor quinoa, cooked
  • 1 cup kale, chopped
  • Kosher salt, to taste

  • Vinaigrette Drizzle
  • Pomegranate Seeds
  • Fennel Fronds

Preparation

  1. Lightly grease skillet surface and pre heat for 30 seconds over medium.
  2. Add squash, garlic, shallots and salt to taste; sauté for 5 minutes.
  3. Stir in vegetable stock.
  4. Reduce heat to low, cover and cook until squash is done but still firm.
  5. Add quinoa, kale and salt to taste; mix well.
  6. Cover and cook for 2 minutes or until kale wilts.
